Plans Still Moving Forward for Slim Chickens Restaurant in Marshfield

(Jamie Rokus, Marshfield News Herald) Plans are moving forward for a new fast-food restaurant near Starbucks.

GMX Real Estate Group proposed building a Slim Chickens with a drive-thru, outdoor patio and parking in September on North Central Avenue and North Peach Street, between the coffee shop at 1707 N. Central Ave. and the Bread & Butter Shop convenience store at 1727 N. Central Ave.

Owners Chad and Nick Sternitzky told the Marshfield News-Herald Friday they plan to break ground on the new restaurant in June, and construction is expected to last about six months.

They anticipate a late 2023 or early 2024 opening date. Slim Chickens features classics such as chicken tenders, chicken wings, sandwiches, salads, chicken and waffles and more. Marshfield would be the company’s second Wisconsin location.

A Slim Chickens restaurant opened Jan. 16 in Appleton and has been “doing very well,” said Rob Gerstenfeld, vice president of real estate and construction for Slim Chickens. Now that the Appleton location is complete, the franchise owners are “laser-focused” on the Marshfield restaurant, Gerstenfeld said.

“We are coming north and seeing tremendous sales,” Gerstenfeld said of the company’s move into the northern U.S. Its first restaurant opened in February 2003 in Fayetteville, ‎Arkansas. “(Slim Chickens) is a little less cookie-cutter and a little more Southern hospitality.”

Nick Sternitzky, who lives in Marshfield, and Chad Sternitzky, who lives in Stevens Point, have plans to open a total of nine Slim Chickens in Wisconsin over the next five or six years, Nick Sternitzky said.

"We are really excited about Marshfield," Nick Sternitzky said. "It is fun to bring something new to Wisconsin, but especially to Central Wisconsin." According to its website, the company has almost 200 locations with six restaurants in Minnesota, Iowa and Illinois and more in development.
