(Wisconsin Ag Connection) -With only four months of higher production during all of 2019, it looks like Wisconsin cheese output will begin 2020 on the down side.According to the latest dairy product summary from the USDA, state dairy plants made 273.9 million pounds of cheese during the month of January. That was 0.9 percent less than a year earlier, and 1.6 percent lower than this past December. Nationally, about 1.10 billion pounds of cheese was produced in the United States in January.
That was a slightly 0.4 percent increase over 2019, but slightly lower than the 1.11 billion manufactured during the previous month. Dry Whey output in Wisconsin was recorded at 25.4 million pounds, which was up 17 percent from last year, but 4.5 percent less compared to last month.
