Alice in Dairyland Talks Potatoes, Final

Tuesday, March 18th, 2014 -- 1:21 PM

-The 66th Alice in Dairyland, Kristen Olson, took time out of her busy schedule on Friday to talk with me about Wisconsin?s Ag industry and, more specifically, in this case, potatoes.

Kristen said that our growers in Wisconsin are growing a rainbow of varieties.

Kristen said, "Our growers are growing potatoes in a rainbow of colors and varieties. From the standard Russets, that I'm sure many of us are familiar with, great for baking, to many other colors. Red potatoes, gold potatoes and even purple potatoes. Those purple potatoes are a great source of antioxidants which is also crucial to our health as well. There are so many different varieties to experiment with and try in your meal."

Potatoes can be prepared in many fun and unique ways.

Kristen continued, "There are endless options for preparing potatoes that come right out of the state of Wisconsin. If you're looking for a simple solution after work or school, you can whip up a potato bar, a baked potato bar. You can experiment with the different varieties or try your standard Russets and really have fun with it. Whether you're adding vegetables and meats to that potato or even cranberries and sauerkraut, two other wonderful agricultural products grown here in Wisconsin."
