Alice in Dairyland Talks Potatoes, Part 1

-The 66th Alice in Dairyland, Kristen Olson, took time out of her busy schedule on Friday to talk with me about Wisconsin?s Ag industry and, more specifically, in this case, potatoes.

Kristen talked about the economic impact that the potato industry has on the state.

Kristen said, "Our agriculture has so much more to offer and potatoes are included in that. We rank 3rd in the nation for potato production here in Wisconsin and 1st east of the Mississippi so it's a huge business for us. It brings in about $260 million into our economy every single year and that results in over 2,000 jobs as well. So we're employing people throughout the state too."

Kristen said potatoes often get a bad rap, but they shouldn?t because they?re very healthy.

Kristen continued, "Just a medium sized potato is low in calories, about 110 calories for that potato. They're also free of a lot of things including cholesterol, sodium, fat and they're gluten free as well. They also have more potassium than a banana and about half of your recommended daily value of vitamin C just to name a few benefits."
